Excellent food! Really, they use fresh ingredients, good cuts of meet, and it’s all done very well. Take my lomo saltado for instance. The beef was good quality, and just slightly pink on the inside so it stayed tender and moist. It was sautéed with spices, soy sauce, and red onion which retained just a slight crunch to it. As always with this signature dish from Peru, it comes with papas fritas, which here are cooked separately so they are still crispy and seasoned on the outside, hot and fluffy on the inside, and finally presented in a circle of wedges around the perimeter of the central dish. The level of attention is really that which you’d expect at a somewhat more expensive kind of restaurant. My worry is that they’ll need to figure out their marketing better: signage, for example. And they need to figure out how to use the difference between Peruvian and Mexican food to draw in customers.
